Another story in the Globe Today, this time in the business section discussing how Vincor (Inniskillin, Jackson Triggs, Le Clos Jordanne etc.) is using the left over grape skin and pulp (aka pomace) to generate power for greenhouse operations with any surplus going back to the grid.
The most shocking statistic to me is that Vincor generates 3,500 tonnes of this left over pamace per harvest. Wow!
